What could we say about the fair booths? It is like taking your house to the fair. The only thing you will miss is the sofa. The "Caseta" is the people's home, with no doors at the entrance, so everybody is invited to go in. The curtains are all pulled back so people from the inside can call their friends and invite them to get in.

Friendship and good manners can be felt everywhere and politeness is also present. Happiness is all around and even happy tears can drop from people's eyes. Come and check it by yourself. Getting into one of the "Casetas" means leaving all sadness outside. Friendship and wine will surround you and you will not want to leave.

The fair booth in May,
like the parrot's feathers,
and the singing colours;
the fair booth in May is
like a brilliant ring
in one of your fingers.

Inside you will see everybody feels like distinguished people. Access is allowed to everyone, making them feel as if they were Kings for one day. And if you are lucky to be accompanied by a woman with her gypsy dress, you will feel like in heaven.

And what can we say about the "tapas" (typical Spanish snacks)? "Berza" (typical Jerez dish), cooked blood with tomatoe, chickpeas with meat, fresh "Gazpacho" (vegetable soup), or a chicken soup to "warm up". Also bull meat is served, with crisps. Chicken liver with fried peppers, all of it served with sherry wine. Seafood and fried fish from the harbours of our province. Do not forget the Spanish omelette with a little bit of cured ham: and we insist on accompanying it with sherry wine.

Half a bottle of wine must be present everywhere, and wine must be drunk using "catavino" (wine taster). "Vino fino", with its elegant yellow colour and smooth flavour: the first glass "warms you up", and the second one will make you dance: "bulerias", "sevillanas", "rumbas" and "alegrías" (typical fair dances) even if you have never done it before. At the fair, nobody will notice if you can dance or not. You must just enjoy the music and that's all. And when the god Bacchus orders so, we must drink enjoying it. No hurries are allowed, as the "Vino fino" is a wine to talk, to laugh, to love and to admire all beautiful women that you will see all around.

And please, don't drink "rebujito" (vino fino with soda), as you will be missing the heart and essence of this wonderful wine.

So, let's go to the next "Caseta".
